Pina Colada Power Smoothie with Microgreens

Microgreens are young seedlings of edible vegetables and herbs harvested less than 14 days after germination and can contain up to 40 times more nutrients than the mature plant. Start your day with this smoothie using sweet microgreens, like broccoli, kale, snow pea, sunflower or a handful of City Roots Sweet Mix.

Ingredients

  • ½ cup frozen pineapple chunks
  • ½ cup frozen mango chunks
  • ½ cup French vanilla yogurt
  • ¾ cup coconut water
  • 1 medium ripe banana, peeled (previously frozen in chunks is ideal)
  • ½ cup “sweet” City Roots microgreens
  • 1 tablespoon raw honey (optional)

Preparation

Add ingredients, in order, to a blender. Cover and blend on high until smooth and creamy. Serve immediately. 

Pour extra portions into freezer-safe cups and freeze for up to 1 month, thawing before serving.
