- 1¼ pounds green tomatoes, diced
- 1 cup sugar
- ½ teaspoon salt
- ½ lemon, juiced
- 1 1-inch piece fresh ginger, grated
Place all ingredients in a sauce pan. Heat on high until the mixture boils, roughly 225°. Reduce heat to low and simmer until the mixture thickens to a jam-like consistency, stirring regularly. This will take roughly 1 hour. Spoon into a jar and refrigerate.
