Midlands Peach Gazpacho

Ingredients

  • 1/4 large red onion, diced
  • 1/2 red pepper, diced
  • 1/2 green pepper, diced
  • 1 tablespoon garlic, chopped
  • 2 yellow tomatoes, diced
  • 2 red tomatoes, diced
  • 1 seedless cucumber, diced
  • 3 peaches, peeled and diced
  • 3 tablespoons sugar
  • 2 tablespoons red wine vinegar
  • 32 ounces V8 juice
  • 1 tablespoon fresh cilantro, chopped
  • 2 tablespons cumin
  • 3 tablespoons black and white sesame seeds, toasted
  • 10-ounce can mandarin oranges, with juice
  • 1/2 cup water
  • Salt and pepper to taste

Preparation

Place all ingredients in a large bowl in order listed, stir lightly for 1 minute. Cover with plastic wrap and place in refrigerator for at least 30 minutes. Serve in large chilled bowls.
