Sparkling Cranberry-Citrus Ginger Punch

We based this crowd-pleasing punch on a Moscow Mule, but honestly, the flavors work so well together, you can leave out the alcohol for a family-friendly sipper. Ginger beer is typically non-alcoholic and has a sharper punch than ginger ale, but feel free to sub a nice spicy ginger ale, such as Blenheim.

Ingredients

SERVINGS: 10 - 12 Cocktail
  • ½ cup pomegranate arils
  • 2 oranges, sliced (navel, Cara Cara or blood oranges)
  • 1 (64-ounce) bottle cranberry juice, divided
  • 32 ounces ginger beer or ginger ale
  • 1 to 2 cups rum or vodka

Instructions

In a metal Bundt or tube pan, sprinkle half of pomegranate arils. Top with half of orange slices; repeat layers once. Add cranberry juice to pan, until last layer of oranges is partly covered. Freeze until solid, about 3 hours.

Dip pan in warm water briefly to release punch ring. Place ring in punch bowl, flat side down. Add remaining cranberry juice, ginger beer and rum as desired. Stir to combine; serve immediately.
