Strawberry Parfaits with Honeyed Yogurt

Assembling the parfaits in pretty stemless glassware makes a beautiful presentation on a spring brunch buffet.

Ingredients

SERVINGS: 4
  • 2 cups fresh strawberries, sliced
  • 1/8 cup fresh orange juice
  • 1 teaspoon orange zest
  • 1/2 teaspoon vanilla extract
  • 1/8 teaspoon ground cardamom
  • 16 ounces full-fat Greek yogurt
  • 3/4 cup local honey, divided
  • 1 cup pistachio nuts, chopped

Instructions

Combine strawberries, orange juice, orange zest, vanilla extract and ground cardamom in a small bowl. Let sit until berries start to release their juice, about 5-10 minutes.

Meanwhile, swirl ½ cup honey into the yogurt.

Assemble the parfait in the following manner: Place ⅛ cup strawberries in the bottom of the glass. Cover with ¼ cup yogurt; follow with an ⅛ cup strawberries, top with yogurt, drizzle with 1 tablespoon honey and garnish with ¼ cup chopped pistachios.
