If you’ve never had a Pimm’s Cup, you’re in for a treat. Made with Pimm’s No. 1, a gin-based British liqueur infused with botanicals, this low-alcohol cocktail sings with spring flavor. Here, we’ve upped the ante with a strawberry-lemon simple syrup that’s good in just about everything.

Ingredients

SERVINGS: 6 Cocktail
  • 1 pound strawberries, divided
  • 1 cup water
  • ¾ cup granulated sugar
  • 2 lemons, divided
  • 12 ounces Pimm’s No. 1 liqueur
  • 2 Persian cucumbers, sliced
  • 2 sprigs fresh mint
  • Spicy ginger ale, to serve

Instructions

Chop half of strawberries; add to a small saucepan with water and sugar. Peel zest from one lemon; add to pan. Halve lemon, and squeeze the juice into pan, discarding seeds. Bring to boil; let simmer 5 minutes, stirring occasionally. Strain and discard solids; let cool completely.

Slice remaining lemon and strawberries. Add Pimm’s, sliced lemon and strawberries, half of sliced cucumbers and half of mint to a pitcher. Stir in desired amount of chilled strawberry syrup. Divide mixture among glasses; top with ginger ale as desired. Garnish with additional mint and cucumber.
