If you’ve never tasted kombucha—an effervescent drink packed with healthy probiotics—what better way to start than with a mimosa?

Ingredients

SERVINGS: 6
  • 2 fresh strawberries, plus additional for garnish
  • 6 fresh spearmint leaves
  • 16 ounces locally made ginger kombucha, chilled
  • 16 ounces sparkling wine, chilled (we chose a brut prosecco)

Instructions

Kombucha tends to have a fairly tart flavor; you may want to choose a slightly sweeter sparkling wine to provide balance. Be creative by combining your favorite flavors of kombucha with your favorite sparkling wine, and adding different in-season fruits and herbs to suit your taste. Look for locally made kombucha at farmers markets and specialty grocery stores.

1. Using a wooden spoon, muddle strawberries and mint leaves in the bottom of a serving pitcher until well mashed.

2. Add kombucha and sparkling wine to pitcher; stir gently to combine. Pour into individual glasses.

3. Garnish each glass with a strawberry on the rim, or float in the glass.
