- 1 large heirloom tomato, diced
- 1/4 cup fresh basil leaves, chopped with extra for garnish
- 1 garlic clove, minced
- 6 large eggs, lightly beaten
- 3 ounces marinated mozzarella
- 1 tablespoon olive oil
Instructions
Preheat the oven to 400°.
Add olive oil to an 8-inch cast iron skillet heat over medium-high heat. Add tomato and garlic; cook, stirring occasionally, until garlic is lightly browned, about 5 minutes.
Add the beaten eggs and basil. Stir to combine. Sprinkle evenly with mozzarella. Cook until the edges set but the center is still runny, about 8 minutes.
Transfer the skillet to the preheated oven; bake until the top is browned and the center is set, about 15 minutes. Let cool slightly; garnish with fresh basil, if desired.
